春蘭及其母本鐵觀音烏龍茶香氣組分分析簡(jiǎn)報(bào)

  對(duì)茶葉的成分分析已經(jīng)屢見不鮮,甚至成了常規(guī)手段,今天帶來的是幾種茶的香氣組分分析簡(jiǎn)報(bào)。摘 要為揭示烏龍茶新品種――春蘭的香氣組分,采用GC/MS法對(duì)春蘭及其母本鐵觀音進(jìn)行分析。結(jié)果表明,春蘭烏龍茶的主要香氣成分是橙花叔醇、香葉醇、吲哚、β-紫羅酮+(Z)茉莉酮、α-法呢烯、芳樟醇、茉莉內(nèi)酯、(Z)-3-已烯酸乙烯、苯甲醛;鐵觀音烏龍茶的主要香氣成分是橙花叔醇、吲哚、α-法呢烯、苯甲醛、β-紫羅酮+(Z)茉莉酮、香葉醇、(Z)-3-已烯酸乙烯、茉莉內(nèi)酯、芳樟醇。春蘭及其母本鐵觀音主要香氣成分相同,僅含量排序有所不同,這與茶葉感官審評(píng)結(jié)果相一致。春蘭與其母本鐵觀音的橙花叔醇含量均很高,分別達(dá)55.5%和46.80%。春蘭萜烯指數(shù)值僅為鐵觀音的一半。由于品種間主要香氣成分的含量存在差異,構(gòu)成了各自品種香型的特征。

  Aromatic constituents of Chunlan and its maternal variety Tieguanying

  AbstractChunlan and its maternal variety-Tieguanying were analysed by GC and MS to study their aromatic constituents.The results were showed as follows:major aromatic constituents of Chunlan Oolong Tea were nerolidol,geraniol,indloe,β-ionone+(Z)-jasmone,α-farnesene,linalool,jasmine lactone,(Z)-3-hexenyl hexanoate,benzaldehyde;Those of Tieguangying Oolong Tea were nerolidol,indole,α-farnesene,benzal dehyde,β-ionone-(Z)-jasmone,geraniol,(Z)-3-hexenyl hexanoate,jasmine lactone,linalool.So the major aromatic constituents of Chunlan and Tieguanying were identical,but their arranges and content were different.The results ware similar to that of organoleptic evaluation on tea.Both of the content of nerolidol in Chunlan and its meternal variety were high,the former were 55.59%,the latter were 46.80%.The index of terpene alkene of Chunlan was only the half of Tieguanying's.These formed different aromatic characteristics.

  春蘭烏龍茶新品種系1979年秋季從我所茶樹品種園采收的安溪鐵觀音自然雜交后代中,經(jīng)系統(tǒng)選育而成的無性系烏龍茶新品種。安溪鐵觀音是閩南烏龍茶的優(yōu)良品種,其干茶具有外形緊結(jié)肥壯、重實(shí),色澤砂綠油潤,香氣馥郁、持久,滋味醇厚甘鮮,湯色橙黃明亮,葉底肥厚軟亮等特點(diǎn)。已有數(shù)百年的栽培歷史,譽(yù)滿中外。而春蘭品種產(chǎn)量比母本(對(duì)照)鐵觀音高39.2%~50.1%,春茶開采期與黃旦相近,比鐵觀音早7 d左右,屬早生種。春蘭品種制烏龍茶品質(zhì)優(yōu)異、香氣清高、蘭花香顯、滋味醇厚、有觀音韻,可以與鐵觀音相媲美,多次榮獲福建省名優(yōu)茶獎(jiǎng),“中茶杯”名優(yōu)烏龍茶二等獎(jiǎng)。且制優(yōu)率高于鐵觀音,是一個(gè)早生、高產(chǎn)、高香、質(zhì)優(yōu)的烏龍茶新品種。為了揭示春蘭及其母本鐵觀音烏龍茶的香氣組分,進(jìn)行分析測(cè)定,現(xiàn)將結(jié)果報(bào)告如下。

  1 材料與方法
  1.1 材料
  春蘭、鐵觀音的鮮葉均采自本所烏龍茶新品種品比區(qū),相同的栽培條件。當(dāng)春梢長(zhǎng)至中開面時(shí),采下駐芽開面三、四葉,采用閩南同一工藝制成干茶。
  1.2 方法
  1.2.1 精油提取 取茶樣50 g,加內(nèi)標(biāo)物癸酸乙酯-已醚液1 ml(50 mg*kg-1)和萃取用乙醚50 ml,用SDE法(用時(shí)水蒸氣蒸餾-萃取法)提取20 min后,在乙醚提取液中加無水硫酸鈉過夜,過濾并濃縮50 μl左右后,其精油供氣相色譜分析[1]。
  1.2.2 氣相色譜分析 島津GC-9A型氣相色譜儀附FID檢測(cè)器,色譜柱為PEG-20 M石英熔融毛細(xì)管柱(50 m×0.2 mm),程序升溫由50℃升至190℃后(2℃*min-1)保持20 min,載體為氮?dú)猓?]。
  1.2.3 定性 采用標(biāo)樣、色-質(zhì)聯(lián)用及與文獻(xiàn)值對(duì)照相結(jié)合進(jìn)行[1]。
  1.2.4 感官審評(píng) 采用ZBX50003-86出口茶葉感官審評(píng)法。

  2 結(jié)果與分析
  2.1 春蘭及其母本鐵觀音烏龍茶香氣組成與含量
  春蘭及其母本鐵觀音烏龍茶香氣成分分析見表1,其審評(píng)結(jié)果見表2。
  從表1中可看出,春蘭烏龍茶共鑒定出57種香氣化合物,其中含量較多的前14種成分折算成相對(duì)
